Collect Ingredients for Patwadi Rassa (Patwadi)
For making Patwadi rassa, we need some of the ingredients are -
- 1 cup gram flour (besan)
- 1 cup yogurt (Optional)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon salt
- 1 tablespoon oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 teaspoon sesame seeds
- 2 green chilies, finely chopped
- 1/2 cup water
- 2 tablespoons chopped coriander leaves
Collect Ingredients for Patwadi Rassa (Gravy)
For making patwadi gravy we require -
- Instant Masala

- 2 tablespoon oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 teaspoon sesame seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon salt
How do I make Patwadi Rassa?
For making Patwadi, collect all the above ingredients, and let's begin.
Step 1 - In a mixing bowl, add chickpea flour, yogurt, turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well to form a smooth batter.
Step 2 - Add water to the batter and mix well.
Step 3 - Heat oil in a pan and add mustard seeds, cumin seeds, and sesame seeds. Let them splutter.
Step 4 - Add green chilies and sauté for a few seconds.
Step 5 - Add the gram flour batter to the pan and keep stirring continuously on medium flame.
Step 6 - Cook for about 10 minutes until the mixture thickens and starts to leave the sides of the pan.
Step 7 - Grease a plate with oil and pour the mixture onto it.
Step 8 - Spread the mixture evenly with a spatula and let it cool for 10 minutes.
Step 9 - Once cooled, cut the patwadi into small diamond-shaped pieces.
Step 10 - Garnish with chopped coriander leaves and serve with coriander chutney.
Making Gravy for Patwadi
Step 1 - Heat the pan and add 2 tablespoons of oil.
Step 2 - Add ginger garlic paste.
Step 3 - Add instant masala and stir it until it turns golden brown.
Step 4 - Add red chilly powder.
Step 5 - Add turmeric powder.
Step 6 - Add salt as per taste and saute it properly.
Step 7 - Add water according to your and let it boil.
Step 8 - Serve the gravy on a plate and add patwadi to it.
Note: Do not put patwadi directly into the pan otherwise it broke and split in the gravy.
Best Maharashtrian Instant Masala
Maharashtra has great taste in Masala. I have grown up seeing and absorbing the beauty and freshness of masala. So, for making gravy thicker we have instant masala. Hungry_Corner is always present such traditional taste. Try at your home!
For preparing instant masala, we need the following ingredients -
- 1 Chopped Onion
- 1/4 of chopped coconut
- Peanuts (1/2 bowl)
- Oil (Oil for Fry)
Now, we will move towards instant masala which provides a nice thickness to our gravy and is commonly used.
Step 1 - Heat the pan and add a few drops of Oil.
Step 2 - Add chopped onion to it.
Step 3 - Add chopped coconut to it and let them fry for 15 min.
Step 4 - Once the onion turns golden brown add 1/2 bowl of peanuts and roast it by gently stirring.
Step 5 - After roasting, it takes out in one dish and is left cool for a while.
Step 6 - Grind the mixture and add while making Patwadi Rassa.
